Courgette Fritters

Hello on this Saturday afternoon!

Hot weather has reached us for the joy of all and we are happy to see people enjoying barbecues! Yes it is the season of parties, grilled meat and all these fabulous dishes that we love eating under the sun.

So, to enjoy great time with your friends and avoid time in the kitchen, I propose a really easy recipe and yummy of Courgette Fritters! We love them with a yoghurt mint sauce or Red pepper Humous or Soya sauce 🙂 – I love Soya sauce

I propose you a good vegetarian main/appetizer made up of just few ingredients – so what are you waiting for? Get grating those courgettes!


  • 1 medium courgette, grated
  • 200 grs self rising flour {or 200 grs plain flour + 1 spoon baking powder}
  • 30 gr parmesan finely grated {cheddar is good too}
  • 1 tbsp. olive oil
  • 2 eggs



In a bowl, combine the grated courgette, flour, the eggs and parmesan. Mix all together and add salt, pepper and paprika.

Pour enough oil into a large frying pan so it rises 2–3mm up the sides and place on a medium heat. Once hot, add 4 separate heaped dessertspoons of mixture to the pan, spacing them well apart. Cook for 6 minutes, turning once halfway through, until golden and crisp on both sides. Transfer to a kitchen paper-lined plate and keep somewhere warm while you continue with the remaining two batches. Place 3 fritters on each plate and serve at once, with the sauce alongside or in a bowl on the side.

Serve hot or cold, with garlic yoghurt (crush together garlic and salt and stir through some yoghurt) and a green salad.

If you fancy a more sophisticated look like little rugby balls – three-sided oval shapes – you can make them by passing the mix between two dessertspoons, scraping the sides down as you go. They look great but the method, although very simple, is a little cheffy.

They make a lovely light lunch or impressive starter and are also great as a snack or canapé with drinks. If you are serving them as a snack, make them slightly smaller – 1 heaped teaspoon rather than the 1 heaped tablespoon needed for the larger portion.
