Egg Free Cake Recipe with coconut milk and strawberries

What a lovely sunday afternoon we have! My family and I went to the park to enjoy the sun and have a bit of fun and play.

Before living this morning, I wanted to make a cake for tea time, a cake that all my family can enjoy, so it needed to be egg free. Unfortunately, no condensed milk left in the cupboard.

So, after checking I remembered a recipe using coconut milk which was perfect as I have few tins left in the cupboard: Great, let’s do It then!

This eggless coconut cake is delicious and moist !

  • Cooking time: approx 35-45minutes
  • Preparation time: 15 minutes
  • Servings : 9

Ingredients


  • 280g Self raising flour
  • 85g Caster sugar
  • 2 tsp Baking powder
  • 280ml Coconut Milk
  • 140ml Corn oil or any vegetable oil
  • 4 tbsp Golden syrup
  • 2 tbsp dessicated coconut

Method

  1. Pre heat your oven to 180C Gas mark 4
  2. Line the base of a round cake tin with baking paper
  3. Sift the flour and sugar in to a bowl and make a well in the centre
  4. Mix the baking powder with a teaspoon of the coconut milk and pour in to the well
  5. Add the rest of the coconut milk along with the oil and golden syrup and beat together to make a batter
  6. Pour the mixture in to the cake tin and bake in the middle of the oven for 35-45 minutes (until it bounces back when touched or when a skewer is inserted it comes out clean)
  7. Meanwhile, a simple frosting {I make mine mixing butter, cheese and sugar}
  8. Remove the cakes from the oven and allow to cool
  9. Once the cake has cooled, cut in half. Put some frosting and strawberries . Put the other half of the cake up and cover with frosting and strawberries.
  10. Sprinkle the coconut on top of the cake and serve
