Egg free Basic sponge cake Recipe with Condensed milk

It is late but I just realised that I forgot to share with you my Egg Free Basic Sponge cake recipe with Condensed milk!

This recipe saved my life, I am absolutely not exaggerating. Baba1 has been diagnosed with egg allergy since birth, and I tried my best for her first birthday to make her a beautiful egg free cake but it was not easy as at this time, she was also allergic to Cow Milk Proteins and other few things. So for her first birthday, I am afraid we have not done any cake.

For her second birthday, I promised myself that this little girl will have a beautiful cake {thankfully she outgrown her milk allergy} and tried to find a very good recipe: this one I am sharing .

This recipe is my BASIC recipe, I use it for mostly any cakes. Why? It works. The cake is fluffy, moisty and we are all happy!

Bare in mind that there is still a light difference than an usual cake, if I can say so.

Ready to bake?


Ingredients


  • 2 cups (280gr) all purpose or plain flour
  • 1/2 cup (60 ml) Softened Butter
  • 1 cup (400 gr) Condensed milk {you can use Evaporated milk just add sugar to the recipe – I prefer not as I then use cake frosting}
  • 2 Tbsp. sugar
  • 1 cup of milk stored at room temperature {you can add more or less depending batter consistency obtained}
  • 2 Tsp. Vanilla Extract {I prefer using  1 Vanilla bean}
  • 1 Tsp. White Vinegar {not mandatory but gives a better texture}
  • 2 Tsp. Baking powder
  • 1 Tsp. Baking Soda

METHOD


  1. Preheat your Oven at 180 degree C.
  2. First you have to mix together all the “dried” ingredients: In a bowl, sift the flour and mix along with the Baking powder and the baking Soda.
  3. In another bowl, we will mix all the “wet” ingredients together. Start by mixing the condensed milk, the milk, the vanilla essence and the softened butter. You can use a food processor to make things easier or just a normal whisk. Stir well until all the ingredients are well combined together.
  4. Now in a food processor or in a bowl, mix gently together the “dried” and “wet” ingredients mix. Don’t overwork the batter. The batter should be of a dropping consistency.
  5. Pour the batter into a greased {7 or 9″diameter} cake pan.
  6. Place the tray on middle rack in the preheated oven.

Egg Free Basic Sponge Cake Recipe

  1. Bake for 10 minutes and then reduce the heat to 150 degrees C, then bake for another 15 minutes. You know the cake is cooked when the cake starts leaving the sides of the pan, get a brown tinge and as a further check – insert a toothpick in the center of the cake and it should come dry and clean.
  2. Remove from the Oven. Let it sit for few minutes (about 5 minutes). Invert it upside down (so that the bottom is now on top) on a plate. Let it cool: the cake is ready.
